Ingredients

Scale
  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, salt, and pepper. Mix until just combined.
  2. Form small meatballs (about 1 inch) and place them on a parchment-lined baking sheet.
  3. Heat oil in a large pot over medium heat. Brown half the meatballs for about 5 minutes; set aside and repeat with remaining meatballs.
  4. Pour beef broth into the same pot, scraping up any browned bits. Add thyme and bring to a simmer.
  5. Stir in heavy cream until blended; return meatballs to the pot and simmer for another 10 minutes.
  6. Serve hot, garnished with fresh parsley if desired.
