Ingredients

Scale
  • 1 cup red lentils
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup coconut milk
  • 4 cups low-sodium vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and grated ginger until fragrant.
  2. Add the spices (cumin, turmeric, coriander) and stir for about a minute to release their flavors.
  3. Incorporate the red lentils and diced tomatoes, followed by the vegetable broth and coconut milk. Mix well.
  4. Bring to a boil, then reduce heat to low and let it simmer for about 20 minutes or until lentils are tender.
  5. For a creamy texture, use an immersion blender to blend the soup; otherwise, leave it chunky.
  6. Adjust seasoning with salt and pepper if needed. Serve garnished with fresh cilantro or a squeeze of lemon juice.
