  • 4 cups fresh pumpkin, cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cumin
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Roast pumpkin halves cut-side down on a baking sheet for 30–40 minutes until tender.
  2. In a large pot, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic and cook until fragrant.
  3. Scoop roasted pumpkin flesh into the pot with onions and garlic.
  4. Pour in vegetable broth and coconut milk; add cinnamon, nutmeg, cumin, salt, and pepper. Stir well.
  5. Simmer for 10 minutes, then blend until smooth using an immersion blender or traditional blender.
  6. Serve warm with optional toppings like toasted seeds or coconut cream.
