  • 1 lb pork tenderloin
  • 1 cup fresh apple cider
  • 2 cups parsnips, peeled and chopped into bite-sized pieces
  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey (or maple syrup)
  • 3 cloves garlic, minced
  • 2 sprigs fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and season generously with salt and pepper.
  3. In a small bowl, whisk together apple cider, honey, minced garlic, and chopped rosemary.
  4. Toss parsnip pieces in olive oil with salt and pepper until well-coated.
  5. Place the seasoned pork on a baking sheet and arrange parsnips around it. Drizzle half of the apple cider glaze over everything.
  6. Roast for 25-30 minutes until pork reaches an internal temperature of at least 145°F (63°C). Brush remaining glaze halfway through.
  7. Slice the pork and serve with roasted parsnips, drizzling any extra sauce on top.
