  • 1 medium butternut squash
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup pomegranate seeds
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Slice the butternut squash in half lengthwise, scoop out the seeds, drizzle with olive oil, and season with salt and pepper.
  3. Place the squash cut-side down in the baking dish and roast for 30-40 minutes until tender.
  4. Meanwhile, rinse the quinoa under cold water. In a saucepan, combine rinsed quinoa and vegetable broth; bring to a boil. Cover, reduce heat, and simmer for about 15 minutes until fluffy.
  5. Once cooked, mix half the pomegranate seeds and feta into the quinoa.
  6. Remove squash from oven, fill each half with the quinoa mixture, top with remaining pomegranate seeds, and serve.
