  • 12 jumbo pasta shells
  • 1 cup pure pumpkin puree
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh sage leaves
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil salted water and cook the jumbo pasta shells until al dente (8-10 minutes). Drain and set aside.
  3. In a bowl, mix pumpkin puree, ricotta cheese, half of the Parmesan cheese, sage, salt, and pepper until well combined.
  4. Stuff each shell with about one tablespoon of the filling and place seam side up in a greased baking dish.
  5. Pour marinara sauce over the stuffed shells, ensuring they are covered but not swimming.
  6. Top with remaining Parmesan cheese and additional sage if desired.
