  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (13.5 oz) coconut milk
  • 4 cups low-sodium vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. Chop the onion, garlic, carrots, and grate the ginger.
  2. In a large pot over medium heat, sauté the onions in oil until translucent (about 5 minutes). Add garlic and ginger; cook until fragrant.
  3. Stir in cumin, turmeric, and coriander; cook for another minute.
  4. Add rinsed lentils and diced carrots to the pot. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 30 minutes until lentils are tender.
