  • 1 cup uncooked wild rice blend
  • 1 medium onion, diced

  • 6 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 cup diced carrots
  • 2 tsp fresh thyme leaves

Instructions

  1. Set the Instant Pot to sauté mode. Add a splash of olive oil and sauté diced onion and minced garlic until fragrant (about 3 minutes).
  2. Add sliced mushrooms and diced carrots; stir until softened.
  3. Stir in the uncooked wild rice blend.
  4. Pour in vegetable broth, add thyme, salt, and pepper to taste. Close the lid securely.
  5. Cook on high pressure for 30 minutes. Release steam carefully.
  6. Stir in coconut milk for creaminess and adjust seasoning as needed before serving.
