  • 2 cups butternut squash (diced)

  • 4 cups low-sodium vegetable broth

  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse soaked adzuki beans under cold water. Dice butternut squash into bite-sized cubes.
  2. Set Instant Pot to sauté mode, add olive oil, onion, and garlic. Sauté for about 3 minutes until fragrant.
  3. Add diced butternut squash and adzuki beans; stir well to combine.
  4. Pour in vegetable broth and sprinkle cumin and cayenne pepper over the mixture.
  5. Seal the lid, set to high pressure, and cook for 30 minutes.
