  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup bell peppers (mixed red and green), chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and bell peppers; sauté for about 5 minutes until softened.
  2. Add ground turkey to the pot. Cook until browned, stirring frequently for about 7 minutes.
  3. Stir in minced garlic, chili powder, cumin, salt, and pepper. Cook for another minute until fragrant.
  4. Pour in diced tomatoes with juices and rinsed beans. Stir well to combine.
  5. Bring to a gentle boil, reduce heat to low, cover, and let simmer for at least 30 minutes.
  6. Ladle chili into bowls and top with cilantro or avocado if desired.
