  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 large leeks (cleaned and sliced)
  • 4 tbsp butter
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 sheets puff pastry

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, melt butter. Add diced chicken, season with salt and pepper, and cook until golden brown (about 5 minutes).
  3. Stir in sliced leeks; cook until softened (approximately 5 more minutes).
  4. Sprinkle flour over the mixture, stir well, then slowly pour in chicken broth and heavy cream. Simmer for about 5 minutes until thickened.
  5. Place one sheet of puff pastry in the baking dish, add the filling, and cover with the second pastry sheet. Seal edges and cut slits in the top for ventilation.
