  • 1 lb sirloin steak, cubed
  • 4 cups low-sodium beef broth
  • 2 medium carrots, sliced
  • 2 medium potatoes (Russet or Yukon gold), diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the steak cubes for about 5 minutes until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (about 4 minutes).
  3. Add the seared steak back to the pot along with carrots, potatoes, beef broth, thyme, bay leaves, salt, and pepper. Stir to combine.
  4. Bring to a boil, then reduce heat to low. Simmer uncovered for about 30 minutes until veggies are tender.
  5. Taste and adjust seasoning as needed before serving hot.
