  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 1 cup bell peppers, diced (any color)
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, brown the ground beef with the chopped onion for about 5-7 minutes. Drain excess fat.
  3. Add diced bell peppers to the skillet and cook for an additional 2 minutes until softened.
  4. In a large bowl, combine the beef mixture with uncooked rice, cream of mushroom soup, beef broth, salt, and pepper. Mix well.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until bubbly and golden brown.
