  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup cheddar, 1 cup mozzarella)
  • 1 cup fresh spinach leaves
  • 1/2 cup red bell pepper, diced
  • 1/4 cup sour cream for dipping
  • 2 tsp olive oil for brushing

Instructions
