Instructions

  1. Wash the baby potatoes under cold water, scrubbing off any dirt. Place in a large pot, cover with cold water, and add a pinch of salt.
  2. Bring to a boil over medium-high heat and cook until fork-tender (15-20 minutes). Drain and cool for 5 minutes.
  3. Preheat the oven to 425°F (220°C). Smash each potato on a lined baking sheet until about half an inch thick.
  4. Drizzle olive oil over the smashed potatoes, sprinkle with salt, pepper, garlic, and herbs.
  5. Roast in the oven for 25-30 minutes or until golden brown and crispy. Serve warm.
