  • 1 cup dried red beans (soaked overnight)
  • 1 cup Andouille sausage (sliced)
  • 1 medium onion (finely diced)
  • 1 bell pepper (chopped)
  • 1 stalk celery (diced)
  • 3 garlic cloves (minced)
  • 2 bay leaves
  • 1 tsp cayenne pepper (adjust to taste)
  • 4 cups water or broth
  • 2 cups long-grain white rice

Instructions

  1. Soak the red beans overnight in plenty of water.
  2. In a large pot, sauté onion, bell pepper, and celery over medium heat until softened, about 5 minutes.
  3. Add minced garlic and sliced sausage; stir until fragrant.
  4. Mix in cayenne pepper and bay leaves, then add soaked beans with enough water or broth to cover by an inch. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 90 minutes, stirring occasionally.
