  • 2 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • Royal icing for decoration
  • Popsicle sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined. Gradually incorporate the flour and baking powder to form a soft dough.
  3. Roll out the dough on a floured surface to about 1/2 inch thick. Use a penguin-shaped cookie cutter to cut out cookies and place them on the prepared baking sheets.
  4. Insert popsicle sticks into the bottom of each cookie before baking.
  5. Bake for 10-12 minutes or until lightly golden around the edges. Allow cookies to cool completely before decorating.
  6. Use royal icing to create cute penguin designs on each cookie pop.
