Authentic Carbonara

Authentic carbonara is a classic Italian pasta dish made with a short list of ingredients. It relies on eggs, aged cheese, cured pork, and black pepper to create a smooth coating for long noodles. The process takes about 30 minutes from start to finish.

This meal works well for a weeknight dinner because it uses items you might already have in your fridge and pantry. The technique of mixing pasta water into the eggs helps the sauce bind together without scrambling. You can get dinner on the table quickly with minimal prep work.

Why is Authentic Carbonara a Must-Try?

Beating the eggs and cheese together first ensures the cheese distributes evenly throughout the sauce.

Searing the pancetta renders out the fat, which then coats the pasta and adds flavor to the entire dish.

Adding hot pasta water to the egg mixture tempers the eggs so they thicken smoothly instead of cooking into lumps.

Ingredients for Authentic Carbonara

• Spaghetti: This long pasta shape provides plenty of surface area for the sauce to cling to. You can use bucatini or linguine instead.

• Pancetta: This cured pork belly brings a salty, savory flavor. Guanciale is the traditional choice if you can find it at a specialty market.

• Pecorino cheese: A hard, salty Italian cheese made from sheep’s milk. Parmesan works as a substitute if needed.

• Eggs: Provide the structure and richness for the sauce. Use large eggs for the right liquid ratio.

• Black pepper: Freshly ground black pepper adds a sharp bite that balances the rich cheese and pork.

Exact quantities are in the recipe card below.

How to Make Authentic Carbonara

Step 1: Mix the sauce base

Start by whisking the eggs in a bowl until they are completely smooth. Stir in the grated pecorino cheese and a generous amount of black pepper. Setting this mixture aside allows the flavors to meld while you prepare the rest of the meal.

Step 2: Cook the pasta and pork

Boil the spaghetti in salted water until it is tender. While the pasta cooks, brown the diced pancetta in a large skillet to render out the fat. Remember to save some of the starchy pasta water before draining the noodles.

Step 3: Combine and heat

Toss the hot pasta into the skillet to coat it in the pork fat. Mix a little tap water and the hot pasta water into your egg bowl to temper the eggs. Pour this mixture over the pasta and toss over low heat until the sauce thickens and reaches 160°F (71°C).

What to Serve with Authentic Carbonara

Serve this pasta with a crisp green salad tossed in a sharp vinaigrette. A slice of crusty bread is helpful for scooping up any extra sauce left in the bowl.

Expert Tips for Authentic Carbonara

For food safety, ensure the egg sauce reaches a safe internal temperature of 160°F (71°C) while tossing it with the hot pasta over low heat.

Grating your own pecorino cheese from a block helps the sauce melt more smoothly than pre-grated options.

Keep the heat very low when adding the egg mixture to avoid scrambling the eggs in the skillet.

How to Store and Freeze Authentic Carbonara

Store leftover carbonara in an airtight container in the fridge for up to 3 days. This dish does not freeze well because the egg sauce will separate when thawed. Reheat gently in a skillet over low heat with a splash of water until it reaches 165°F (74°C) for food safety.

Authentic Carbonara Recipe FAQs

Can I use bacon instead of pancetta?

Yes, thick-cut bacon works well as a substitute. It will add a smoky flavor that is slightly different from traditional pancetta.

Why did my eggs scramble when I added them?

Eggs scramble if the pan is too hot or if they are not tempered. Mixing pasta water into the eggs first and keeping the skillet on low heat prevents this.

Do I need to add cream to carbonara?

An authentic carbonara does not use heavy cream. The creamy texture comes entirely from the emulsion of eggs, cheese, and starchy pasta water.
