Shrimp Bisque Soup

This shrimp bisque is a creamy, flavorful soup that gets its wonderful depth from a homemade shrimp stock. By simmering the shells, you extract every bit of flavor from the shrimp, creating a base that makes the finished dish taste special.

While it involves a few steps, this recipe comes together in about an hour. It’s a satisfying choice for a weekend lunch or a light dinner that feels a little bit elegant.

Why is Shrimp Bisque Soup a Must-Try?

Homemade Shrimp Stock: Using the shells creates a flavor base with a seafood depth you can’t get from a carton.

Classic Roux Thickener: A simple mixture of butter and flour gives the bisque its traditional, smooth, and creamy body.

Balanced Richness: Half-and-half adds a pleasant creaminess that complements the seafood flavor without being overly heavy.

Ingredients for Shrimp Bisque Soup

• Shrimp: Look for raw, unpeeled shrimp. The shells are essential for making the flavorful stock. Any size works, but larger shrimp are often easier to peel.

• Dry Sherry: This adds a nutty, complex background note that is classic in bisque. Look for it in the wine aisle, not the cooking wine section.

• Half-and-Half: This is a mixture of whole milk and cream. For a richer soup, you can use all heavy cream. For a lighter version, use whole milk, but the soup will be less creamy.

• Tomato Paste: This provides a beautiful color and a subtle acidic sweetness that balances the richness of the cream and butter.

Exact quantities are in the recipe card below.

How to Make Shrimp Bisque Soup

Step 1: Prepare Shrimp and Make Stock

First, peel your shrimp and set the meat aside. Place the shells in a saucepan with broth, bring to a simmer, and cook for 30 minutes. This creates a deeply flavorful stock. Strain the stock and discard the shells.

Step 2: Build the Soup Base

In a large pot, melt butter and soften the shallots and garlic. Whisk in flour to make a roux, then stir in tomato paste and cook for a couple of minutes to deepen its flavor.

Step 3: Create the Bisque

Pour in the sherry to deglaze the pot. Gradually whisk in your homemade shrimp stock and the half-and-half. Let the soup simmer gently until it thickens into a creamy consistency.

Step 4: Finish and Serve

Chop the reserved shrimp meat and add it to the thickened soup. Cook for just a few minutes until the shrimp turn pink and opaque. Season with salt and pepper, and serve immediately with a sprinkle of fresh chives.

What to Serve with Shrimp Bisque Soup

Serve this bisque with crusty bread for dipping, or a simple green salad on the side.

Expert Tips for Shrimp Bisque Soup

For food safety, cook shrimp until their internal temperature reaches 145°F (63°C). They will be opaque and firm.

For an extra-smooth texture, you can use an immersion blender to puree the soup base before adding the shrimp pieces in step 8.

If you don’t have sherry, you can substitute a dry white wine like Sauvignon Blanc, or simply use an extra 1/4 cup of broth.

Feel free to add other cooked seafood, like chopped lobster or crab meat, along with the shrimp at the end.

How to Store and Freeze Shrimp Bisque Soup

Store leftover soup in an airtight container in the refrigerator for up to 2 days. This soup does not freeze well, as the cream may separate. Reheat gently on the stove over low heat, being careful not to boil, which can make the shrimp tough.

Shrimp Bisque Soup Recipe FAQs

Can I make shrimp bisque ahead of time?

Yes, you can prepare the soup base (through step 7) and store it in the fridge for up to 2 days. When you are ready to serve, gently reheat the base on the stove and then add the raw shrimp to cook through.

Can I use pre-cooked shrimp?

It is not recommended. You need the raw shells to make the flavorful stock. Using pre-cooked shrimp also makes them likely to become overcooked and rubbery when you reheat them in the soup.

My bisque isn’t completely smooth. How can I fix it?

For a smoother, more uniform texture, you can use an immersion blender or a standard blender to puree the soup base after you’ve whisked in the stock and cream, but before you add the shrimp pieces.

Ingredients

  • 1 lb large raw shrimp unpeeled, 450g
  • 4 cups vegetable or chicken broth 960ml
  • 6 tbsp unsalted butter 85g
  • 1/2 cup finely chopped shallots 75g
  • 2 cloves garlic minced
  • 1/3 cup all-purpose flour 40g
  • 3 tbsp tomato paste 45g
  • 1/4 cup dry sherry 60ml
  • 2 cups half-and-half 480ml
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 tbsp chopped fresh chives for garnish

Instructions

  • Peel the shrimp, placing the shells in a medium saucepan. Set the peeled shrimp aside on a cutting board. Add the broth to the saucepan with the shells.
  • Bring the broth and shells to a simmer over medium heat. Reduce heat to low, cover, and let simmer gently for 30 minutes. Strain the broth through a fine-mesh sieve into a bowl, pressing on the shells to extract all liquid. Discard the shells.
  • While the stock simmers, chop the peeled shrimp into bite-sized pieces and refrigerate until needed.
  • In a large pot or Dutch oven, melt the butter over medium heat. Add the shallots and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 more minute until fragrant.
  • Sprinkle the flour over the shallots and cook, stirring constantly, for 2 minutes to form a roux. Add the tomato paste and continue to stir for another 2 minutes.
  • Whisk in the dry sherry, scraping up any browned bits from the bottom of the pot. Cook until the sherry has mostly evaporated.
  • Gradually pour in the reserved shrimp stock while whisking constantly to prevent lumps. Whisk in the half-and-half. Bring the soup to a gentle simmer and cook, stirring occasionally, until it has thickened, about 5-7 minutes.
  • Stir in the chopped shrimp. Cook just until the shrimp are pink, opaque, and cooked through, about 3-4 minutes. The internal temperature of the shrimp should reach 145°F (63°C).
  • Season with salt and pepper to taste. Serve hot, garnished with fresh chives.
