Individual beef wellingtons are a classic dish made personal. Each serving has a tender filet mignon steak and a rich mushroom filling, all enclosed in a golden, flaky puff pastry crust.
While it looks impressive, this recipe breaks the process down into simple stages. You can even prepare parts of it ahead of time, making it a manageable choice for a special dinner at home.
Why is Individual Beef Wellington a Must-Try?
Searing the steak first adds a deep, savory flavor and helps prevent the meat from making the pastry soggy.
Cooking the mushrooms until dry concentrates their flavor and is the key to a successful duxelles that will not leak water during baking.
Chilling the assembled wellingtons before baking helps the puff pastry stay firm, ensuring it bakes up tall and flaky instead of slumping.
Ingredients for Individual Beef Wellington
• Filet Mignon: Look for center-cut filets that are thick, about 2 inches, and uniform in shape so they cook evenly.
• Puff Pastry: All-butter puff pastry will give you the best flavor and texture. Thaw it in the refrigerator overnight for best results.
• Mushrooms: Cremini or baby bella mushrooms work well and add more flavor than white button mushrooms, but any kind will do.
• Herbed Cheese: Boursin is convenient and flavorful. You could also use a smooth pâté or a different garlic-and-herb soft cheese spread.

How to Make Individual Beef Wellington
Step 1: Sear the Steaks & Make the Duxelles
First, season and sear the steaks in a hot skillet until browned, then set them aside to cool completely. In the same pan, cook the finely chopped mushrooms, shallots, and thyme until all the moisture has evaporated. Let this mixture cool completely too.
Step 2: Assemble the Wellingtons
Roll out the thawed puff pastry and cut it into four equal squares. Place a cooled steak in the center of each square, top with a layer of herbed cheese, and then a spoonful of the cooled mushroom mixture.

Step 3: Wrap, Chill, and Bake
Brush the pastry edges with beaten egg, then fold the pastry up and over the steak, pinching the seams to seal it tightly. Chill the wrapped wellingtons for at least an hour. To finish, brush with more egg wash and bake in a hot oven until the pastry is deep golden brown.
What to Serve with Individual Beef Wellington
These are lovely with simple sides like roasted asparagus or a green salad with a light vinaigrette.
Expert Tips for Individual Beef Wellington
For food safety, the USDA recommends cooking whole cuts of beef to a minimum internal temperature of 145°F (63°C), followed by a 3-minute rest.
Ensuring your steak and mushroom mixture are completely cool before wrapping is very important. This prevents the puff pastry from becoming soggy.
If you don’t have a garlic and herb cheese spread, you can use a smooth liver pâté for a more traditional flavor, or mix your own soft cream cheese with minced garlic and herbs.
All-butter puff pastry provides the best flavor and texture. Thaw it in the refrigerator overnight for the easiest handling.
How to Store and Freeze Individual Beef Wellington
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in an oven or air fryer at 350°F (175°C) for 10-15 minutes, or until warmed through. Freezing is not recommended as the pastry will become soggy.

Individual Beef Wellington Recipe FAQs
Can I make these ahead of time?
Yes, you can assemble the wellingtons and store them, tightly wrapped, in the refrigerator for up to 24 hours before baking.
Why was my puff pastry soggy on the bottom?
This usually happens if the steak or mushroom mixture is not cooled completely before assembly, or if the mushroom duxelles still contains too much moisture. Cooking the mushrooms until very dry is key.
Can I use a different cut of beef?
Filet mignon is traditional because it’s very tender and has a uniform shape. You could try a different tender, thick-cut steak like a top sirloin, but cooking times may vary.

Individual Beef Wellington
Ingredients
- 4 filet mignon steaks about 2 inches thick, 4-ounce / 115 g
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil 15 ml
- 2 tablespoons unsalted butter 28 g
- 8 ounces cremini mushrooms finely chopped, 225 g
- 2 large shallots minced
- 1 tablespoon fresh thyme leaves
- 1 sheet all-butter puff pastry thawed, 14-ounce / 400 g
- 4 ounces garlic and herb cheese spread (like Boursin) 115 g
- 1 large egg beaten with 1 teaspoon of water
Instructions
- Pat the filet mignon steaks dry with paper towels and season all over with salt and pepper.
- Heat olive oil in a large skillet over high heat. Once the oil is shimmering, sear the steaks for 2 minutes per side until a brown crust forms. Transfer the steaks to a plate and let them cool completely.
- Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the chopped mushrooms, shallots, and thyme. Cook, stirring occasionally, for 8-10 minutes, until the mushrooms have released their liquid and the mixture is dry. Remove from the heat and let it cool completely.
- On a lightly floured surface, roll out the puff pastry sheet into a 14x14-inch square. Cut the pastry into four equal 7x7-inch squares.
- Spread 1/4 of the garlic and herb cheese over the top of each cooled steak. Top the cheese with 1/4 of the cooled mushroom mixture.
- Place one steak in the center of each pastry square. Lightly brush the edges of the pastry with the beaten egg wash. Fold two opposite corners up over the steak, then bring the other two corners up to meet in the middle. Pinch all the seams together firmly to seal the package.
- Place the wrapped wellingtons seam-side down on a parchment-lined baking sheet. Cover and refrigerate for at least 1 hour or up to 24 hours.
- Preheat your oven to 425°F (220°C). Remove the wellingtons from the refrigerator, unwrap, and brush the entire surface of each with the egg wash.
- Bake for 15-18 minutes, or until the pastry is golden brown and puffed. For medium-rare, the internal temperature should be 130-135°F (54-57°C). Let the wellingtons rest for 5-10 minutes before serving.
