Pecan Pie Cobbler

Pecan pie cobbler combines the nutty, caramel flavor of pecan pie with the soft, cakey topping of a cobbler. It’s a clever dessert that creates its own rich sauce on the bottom of the pan as it bakes.

From start to finish, this dish comes together in under an hour. The assembly is quick and uses common pantry staples, making it a great choice for a spontaneous sweet treat or a low-effort holiday dessert.

Why is Pecan Pie Cobbler a Must-Try?

The specific layering of ingredients is what makes this recipe work. Pouring batter over melted butter and pecans keeps the layers distinct.

Boiling water is poured over the top, which seems unusual. The water sinks through the batter, dissolving the brown sugar to form a sweet sauce at the bottom of the dish.

Not stirring is a key step. This allows the batter to bake into a light cake on top while the sauce forms separately underneath, creating the cobbler’s signature texture.

Ingredients for Pecan Pie Cobbler

• Pecans: Halves or pieces both work well. There is no need to chop the halves unless you prefer smaller pieces.

• Milk: Whole milk provides richness, but 2% milk can be used as a substitute.

• Brown Sugar: You can use either light or dark brown sugar. Dark brown sugar will result in a sauce with a more pronounced molasses flavor.

• Butter: Unsalted butter is recommended to control the saltiness of the final dish. If you only have salted butter, you can reduce the added salt to a pinch.

• Cinnamon: Just a touch of cinnamon adds warmth that complements the pecans and brown sugar.

Exact quantities are in the recipe card below.

How to Make Pecan Pie Cobbler

Step 1: Prepare the Pan and Batter

First, preheat your oven to 350°F (175°C). Pour the melted butter directly into a 9×13-inch baking dish and sprinkle most of the pecans over it. In a separate bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt. Stir in the milk and vanilla until you have a smooth batter.

Step 2: Layer the Cobbler

Gently pour the batter over the butter and pecans in the dish, spreading it to the edges. Be careful not to mix the layers. Sprinkle the brown sugar evenly over the batter, followed by the rest of the pecans.

Step 3: Add Water and Bake

Now for the magic step. Carefully pour boiling water all over the top of the cobbler. Do not stir anything together. Place the dish in the preheated oven and bake for 30 to 35 minutes. The cobbler is done when the topping is golden and a toothpick inserted into the cake part comes out clean.

What to Serve with Pecan Pie Cobbler

This cobbler is delicious on its own, served warm from the dish. For an extra treat, add a scoop of vanilla ice cream or a spoonful of whipped cream.

Expert Tips for Pecan Pie Cobbler

It is very important that you do not stir the layers after pouring the batter or the hot water. The layering is what creates the separate cake and sauce.

The cobbler is best served warm. The sauce will be thin when it first comes out of the oven but will thicken upon standing.

You can use either pecan halves or chopped pecans for this recipe. If you have a few extra minutes, toasting them beforehand will deepen their flavor.

For a clean slice, let the cobbler cool completely. Otherwise, spoon it into bowls while warm and gooey.

How to Store and Freeze Pecan Pie Cobbler

Store leftover cobbler covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave until warm. The cobbler can also be frozen in an airtight container for up to 3 months; thaw in the refrigerator before reheating.

Pecan Pie Cobbler Recipe FAQs

Why is my sauce so thin?

The sauce will be quite thin right out of the oven. It needs to cool for at least 15 minutes, during which time it will thicken into a richer, more syrupy consistency.

Can I use a different kind of nut?

Yes, walnuts are a great alternative to pecans and would work well in this recipe with no other changes needed.

Can I make this ahead of time?

This dessert is best baked and served fresh. Because of the way the sauce forms, it does not assemble well in advance. You can, however, measure out your dry ingredients ahead of time to speed up the process.
