30 Minute Butternut Squash Black Bean Quesadillas are a quick and delicious way to elevate your dinner table.   • 1 medium butternut squash (about 2 cups diced)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 2 tbsp extra virgin olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt to taste

Instructions

  1. Peel and dice the butternut squash into small cubes. Heat 1 tbsp olive oil in a skillet over medium heat. Add the squash along with chili powder, cumin, and salt; sauté until tender (8-10 minutes).
  2. Once the squash is soft, add the rinsed black beans and cook for an additional few minutes until heated through.
  3. On one tortilla, sprinkle cheese on half, layer on the butternut squash-black bean mixture, top with more cheese, and fold.
  4. In the same skillet, add a little olive oil if needed and cook the folded quesadilla until golden brown (3-4 minutes). Flip and repeat on the other side.
  5. Remove from heat, let cool slightly, slice into wedges, and serve hot with salsa or guacamole.
